Subconciously Craving Yakisoba

A few days ago I started getting all consuming cravings for Malaysian food. The problem being I've never really had Malaysian food (but I do watch too much Travel Channel). After some careful internet searching and pinning of every Asian noodle dish I came across I finally interpreted what my stomach was trying to communicate. It wanted yakisoba.
Yakisoba is this delicious fried noodle dish often found at Japanese festivals and it had been far too long since I had any. So today I showered and got dressed and sort of did my hair just so I could go to the Asian grocery store in search of yakisoba. Luckily they had the exact kind I was looking for! Yakisoba just means "fried noodles" and it isn't actually made with soba noodles, it's made with Chinese egg noodles... but it is fried! Sean and I like ours vegetarian so we stir-fry chopped onion, red and yellow pepper, carrots, mushrooms, snow peas and thinly sliced napa cabbage but almost any vegetable or meat can be used. Thus it's perfect for cleaning out the fridge not to mention super fast to make and delicious.

I recommend Maruchan yakisoba noodles (with sauce packets) and Otafuku yakisoba sauce. I generally use the sauce packets that come with the noodles but always need more, especially considering the massive amounts of veggies I add.
DO IT
1. Chop and stir-fry veggies and meat in a wok with a bit of oil until cooked but still crisp
2. Mix yakisoba sauce powder with a bit of water (1/4th cup if making all three noodle packets) in a dish
3. Add noodles to the wok with the veggies (they're fresh noodles, no need to cook) and pour in the sauce
4. Toss noodles and veggies together until saucy and warmed through. Definitely add more sauce cause its so good.
5. Only eat with chopsticks. Wax sentimental about summer matsuri.

Yum! I'm a big fan of Komi Sauce over Otafuku but it's hard not to love yakisoba. If you eat eggs, a fried egg on top adds an extra layer of deliciousness!
